Chains and freewheels are two other components that are commonly not original on most vintage bikes. Wheels also came and went, particularly on road bikes that were raced competitively. I have seen similar upgrades with Campy brakesets when they came available to complete the ‘gruppo’ on Roma models from the early to mid 60’s.
